Shawarma is one of our favourite things to eat out.  We love it, the kids love it, it can be relatively healthy and it is easy to make.  But I was tired of either waiting until we went out to a big city to get it, and tired of having to ask my husband to bring me home some, and tired of spending money on it when I knew I could do it at home.  Now obviously this isn’t a true shawarma recipe as it isn’t stacked and cooked on a vertical spit, but this is a great at home version.

I used boneless skinless chicken thighs, but you can do half thighs and half breasts to make it more healthy, but this recipe really wont work with just breasts as they will dry out and not have as much flavour.  This is a delicious, easy recipe that can be cooked either on the grill (how we prefer it) or in the oven.

This is flavourful and jam packed with all the great flavours you get in a really good shawarma.  Now I don’t have to wait until we go to the city, or for my husband to bring home some after work.  I can enjoy it in our own home and not have the added stress on taking the kids out to a restaurant.

You will need:

Baking sheet (or grill)

Skewers

Large Bowl or Large Zippered Bag

2-3 pounds of chicken meat (half breasts, half thighs or all thighs)
1 tbsp Cumin
3 tsp paprika (or smoked paprika)
2 tsp all spice
1 tsp turmeric
1 tsp garlic powder
2 cloves of chopped garlic
1 tsp cinnamon
cayenne (just a pinch)
salt and pepper

Directions

If using the oven method preheat oven to 400
If using wooden skewers let them soak water to avoid burning on grill.

In a small bowl whisk together the spices, and 1/4 cup of olive oil.

Slice the chicken into strips and place in a large bowl or plastic zippered bag. Add the spice mixture and massage into chicken. Let marinade for at least 30 minutes, but longer is better.

Add several pieces of chicken to each skewer.

 

Grill Method

Cook on grill on a low and steady heat turning every few minutes.
Once cooked remove from heat and let cool slightly

Oven Method

Place chicken on a lined, oiled cookie sheet and cook for about 15 minutes until cooked through.
Remove from oven and let cool slightly

Once chicken has cooled slightly cut up chicken into small pieces and add to a hot frying pan with a couple teaspoons of oil and heat up. Depending on the amount of chicken you used, you may want to do this is two batches. Fry up the chicken, remove and enjoy.

I like to serve this with rice cooked in chicken stalk, coleslaw and homemade garlic sauce.
